Ingredients
– 1.5 lbs boneless, skinless chicken thighs
– 1/2 cup soy sauce
– 1/2 cup brown sugar
– 3 cloves garlic, minced
– 1 tbsp fresh ginger, grated
– 1/2 cup pineapple juice
– 2 green onions, sliced
Instructions
1. – In a large resealable bag or bowl, combine the soy sauce, brown sugar, garlic, ginger, and pineapple juice. Add the chicken and toss to coat. Marinate for at least 30 minutes, up to 8 hours.
2. – Preheat grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
3. – Grill the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center.
4. – In the last 2-3 minutes of grilling, brush the chicken with the remaining marinade to create a caramelized glaze.
5. – Transfer the grilled Huli Huli Chicken to a serving platter and garnish with sliced green onions.
Notes
For best results, marinate the chicken for at least 30 minutes to allow the flavors to fully develop. You can also broil the chicken in the oven if you don’t have access to a grill.
