Description

These 5-minute Hot Honey Pickled Carrots are a sweet, spicy, and tangy snack that’s impossible to resist. Crunchy carrot slices are quickly pickled in a hot honey brine for a flavor explosion in every bite.


Ingredients

– 1 lb carrots, peeled and sliced into 1/4-inch coins

– 1 cup apple cider vinegar

– 1/2 cup honey

– 1 tsp red pepper flakes

– 1 tsp kosher salt


Instructions

1. – In a medium bowl, combine the sliced carrots, apple cider vinegar, honey, red pepper flakes, and salt. Stir to coat the carrots evenly.

2. – Cover the bowl and refrigerate for at least 30 minutes, or up to 1 week.

3. – When ready to serve, remove the pickled carrots from the brine using a slotted spoon. Enjoy as a snack, appetizer, or side dish.

Notes

For a spicier version, add an extra 1/2 tsp of red pepper flakes. The pickled carrots will keep in the fridge for up to 2 weeks.
