Ingredients
– 1 lb heirloom carrots, peeled and cut into 1-inch pieces
– 2 tbsp honey
– 2 tbsp yuzu juice (or substitute lemon or lime juice)
– 1 tbsp olive oil
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. In a large bowl, toss the peeled and cut heirloom carrots with the honey, yuzu juice, olive oil, salt, and black pepper until the carrots are evenly coated.
