Ingredients
– 12 Medjool dates, pitted
– 1/2 cup ricotta cheese
– 2 tablespoons honey, plus more for drizzling
– 1/4 cup shelled pistachios, chopped
Instructions
1. – Slice each date lengthwise and gently remove the pit.
2. – In a small bowl, mix together the ricotta and 2 tablespoons of honey until well combined.
3. – Scoop a small amount of the ricotta mixture into the center of each date.
4. – Sprinkle the chopped pistachios over the top of the filled dates.
5. – Drizzle a small amount of additional honey over the stuffed dates.
6. – Serve immediately or chill in the refrigerator until ready to serve.
Notes
For a variation, try using different types of nuts, such as almonds or walnuts, instead of pistachios. These stuffed dates can be made in advance and stored in the refrigerator for up to 3 days.
