Ingredients

– 1 3/4 cups all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1/2 cup honey

– 1 cup peeled and diced fresh peaches

– 8 ounces cream cheese, softened

– 1/2 cup unsalted butter, softened

– 3 cups powdered sugar


Instructions

1. – Preheat the oven to 350°F. Line a 12-cup muffin tin with paper liners.

2. – In a medium bowl, whisk together the flour, baking powder, and salt.

3. – In a large bowl, beat the 1/2 cup of softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

4. – Add the eggs one at a time, beating well after each addition. Stir in the vanilla and honey.

5. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the diced peaches.

6. – Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

7. – Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

8. – Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

9. – In a large bowl, beat the 8 ounces of softened cream cheese and 1/2 cup of softened butter until smooth and creamy.

10. – Gradually add the powdered sugar and beat until light and fluffy.

11. – Pipe or spread the cream cheese frosting onto the cooled cupcakes.

Notes
