Indulge in the irresistible blend of sweet honey, roasted acorn squash, tangy goat cheese, and a luscious cranberry drizzle. This easy-to-make dish is perfect for a cozy family dinner or a sophisticated gathering.
Ingredients
– 2 medium acorn squash, halved and seeded
– 1/4 cup honey
– 2 tablespoons olive oil
– Salt and freshly ground black pepper
– 4 ounces creamy goat cheese
– 1/2 cup fresh or frozen cranberries
– 2 tablespoons maple syrup
– 1 tablespoon balsamic vinegar
Instructions
1. 1. Preheat the oven to 400°F.
2. 2. Place the acorn squash halves cut-side up on a baking sheet. Drizzle with honey and olive oil, then season with salt and pepper.
3. 3. Roast the squash for 30-35 minutes, or until tender and caramelized.
4. 4. In a small saucepan, combine the cranberries, maple syrup, and balsamic vinegar. Cook over medium heat, stirring occasionally, until the cranberries have softened and the sauce has thickened, about 10 minutes.
5. 5. Remove the roasted squash from the oven and top each half with a generous amount of creamy goat cheese. Drizzle the warm cranberry sauce over the top.
6. 6. Serve the Honey-Glazed Acorn Squash with Creamy Goat Cheese and Cranberry Drizzle warm, garnished with additional fresh cranberries if desired.
Notes
– For a creamier texture, mash the goat cheese with a fork before spooning it onto the roasted squash. – Experiment with different types of squash, such as butternut or delicata, for variety.
