Ingredients

– 2 medium acorn squash, halved and seeded

– 1/4 cup honey

– 2 tablespoons olive oil

– Salt and freshly ground black pepper

– 4 ounces creamy goat cheese

– 1/2 cup fresh or frozen cranberries

– 2 tablespoons maple syrup

– 1 tablespoon balsamic vinegar


Instructions

1. 1. Preheat the oven to 400°F.

2. 2. Place the acorn squash halves cut-side up on a baking sheet. Drizzle with honey and olive oil, then season with salt and pepper.

3. 3. Roast the squash for 30-35 minutes, or until tender and caramelized.
