Ingredients
– 1 cup cornmeal
– 1 cup all-purpose flour
– 1/4 cup granulated sugar
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, melted
– 1/2 cup honey
– 2 large eggs
Instructions
1. – Preheat the oven to 400°F (200°C). Grease a 24-cup mini muffin tin.
2. – In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
3. – In a separate bowl, whisk together the melted butter, honey, and eggs.
4. – Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
5. – Scoop the batter into the prepared mini muffin cups, filling them about 3/4 full.
6. – Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
7. – Allow the cornbread poppers to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
Notes
– For an extra honey butter flavor, brush the warm cornbread poppers with additional honey butter after baking.
– These poppers can be stored in an airtight container at room temperature for up to 3 days.
