Description

Ingredients

– 1 (4-5 lb) prime rib roast

– 2 tbsp olive oil

– 3 tbsp finely chopped fresh rosemary

– 2 tbsp finely chopped fresh thyme

– 3 cloves garlic, minced

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. – Preheat oven to 450°F.

2. – In a small bowl, mix together the rosemary, thyme, garlic, salt, and pepper.

3. – Rub the prime rib roast all over with the olive oil, then generously coat it with the herb mixture, pressing it in to adhere.

4. – Place the roast fat-side up on a rack in a shallow roasting pan.

5. – Roast for 15 minutes, then reduce the oven temperature to 300°F and continue roasting for 2-2.5 hours, until the internal temperature reaches 130°F for medium-rare.

6. – Let the roast rest for 15-20 minutes before slicing and serving.

Notes

For a more well-done roast, cook until the internal temperature reaches 140°F. You can also adjust the cooking time based on the size of your prime rib roast.
