Description

Discover the secret to a perfectly seasoned, 30-minute Healthy White Chicken Chili that’s bursting with flavor! This cozy, comforting meal is packed with protein and sure to become a family favorite.

Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cans (15 oz each) white beans, drained and rinsed

– 4 cups low-sodium chicken broth

– 1 tsp ground cumin

– 1 tsp dried oregano

– 1 tsp chili powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– Toppings: shredded cheese, fresh cilantro, lime wedges

Instructions

1. – In a large pot or Dutch oven, sauté the onion and garlic in a bit of oil over medium heat until softened, about 5 minutes.

2. – Add the cubed chicken and cook until browned, about 7-10 minutes.

3. – Stir in the white beans, chicken broth, cumin, oregano, chili powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the chicken is cooked through and the flavors have blended.

4. – Ladle the chili into bowls and top with shredded cheese, fresh cilantro, and a squeeze of lime juice.

Notes

– For a creamier chili, blend 1 cup of the beans with 1/2 cup of the broth before adding to the pot.

– Customize the spice level by adjusting the amount of chili powder.

– Serve with warm cornbread or tortilla chips for dipping.
