Ingredients
– 1 medium spaghetti squash, halved and seeded
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup shredded cheddar cheese
– 1/2 cup heavy cream
– 2 cloves garlic, minced
– 1/4 cup grated Parmesan cheese
– 2 tablespoons chopped fresh parsley
Instructions
1. – Preheat oven to 400°F.
2. – Place the spaghetti squash halves cut-side down on a baking sheet. Bake for 40-45 minutes, or until tender when pierced with a fork.
3. – Remove the squash from the oven and let cool slightly. Use a fork to scrape the flesh into strands.
4. – In a large bowl, combine the spaghetti squash strands, olive oil, salt, and black pepper. Mix well.
5. – In a separate bowl, mix the cheddar cheese, heavy cream, and garlic.
