Ingredients

– 1 lb boneless, skinless chicken breasts

– 1/2 cup prepared pesto

– 8 large lettuce leaves (such as romaine or bibb)

– 1/2 cup cherry tomatoes, halved

– 1/4 cup thinly sliced red onion

– 2 tbsp grated Parmesan cheese

– Salt and pepper to taste


Instructions

1. 1. In a medium bowl, toss the chicken with the pesto until well coated.

2. 2. Heat a grill or grill pan over medium-high heat. Cook the chicken for 6-8 minutes per side, or until cooked through.

3. 3. Let the chicken rest for 5 minutes, then slice or shred it into bite-sized pieces.

4. 4. Lay the lettuce leaves flat on a plate or platter. Top each leaf with the pesto chicken, cherry tomatoes, and red onion.
