Succulent, marinated chicken skewers grilled to perfection and served with fresh vegetables and a tangy yogurt sauce. This Healthy Greek Chicken Souvlakis recipe is a quick and easy way to enjoy the bold flavors of the Mediterranean.
Ingredients
– 1 lb boneless, skinless chicken thighs, cut into 1-inch cubes
– 1 cup plain Greek yogurt
– 2 tbsp lemon juice
– 3 cloves garlic, minced
– 1 tsp dried oregano
– 1/2 tsp ground cumin
– 1/4 tsp red pepper flakes
– 1/4 tsp salt
– 1 red onion, sliced
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– Wooden skewers, soaked in water for 30 minutes
Instructions
1. – In a large bowl, combine the chicken, yogurt, lemon juice, garlic, oregano, cumin, red pepper flakes, and salt. Toss to coat the chicken. Cover and refrigerate for 30 minutes to 1 hour.
2. – Preheat grill to medium-high heat.
3. – Thread the marinated chicken, onion slices, and bell pepper slices onto the soaked wooden skewers.
4. – Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through.

Notes
For best results, marinate the chicken for at least 30 minutes to allow the flavors to develop. You can also bake the skewers in the oven at 400°F for 15-20 minutes if you don’t have access to a grill.
