Ingredients

– 1 lb boneless, skinless chicken breasts, diced

– 8 cups low-sodium chicken broth

– 2 cups egg noodles

– 1 cup diced carrots

– 1 cup diced celery

– 1 cup diced onion

– 3 cloves garlic, minced

– 2 tbsp fresh parsley, chopped

– 1 tsp dried thyme

– Salt and pepper to taste


Instructions

1. 1. In a large pot or Dutch oven, sauté the onion and garlic in a bit of olive oil over medium heat until fragrant and translucent, about 3-5 minutes.

2. 2. Add the diced chicken, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the chicken is partially cooked.

3. 3. Pour in the chicken broth and bring the mixture to a boil. Reduce heat and simmer for 10 minutes.

4. 4. Add the egg noodles and continue simmering for an additional 8-10 minutes, or until the noodles are tender and the chicken is fully cooked.
