Ingredients

– 3 pounds Yukon Gold potatoes, peeled and diced

– 1 onion, diced

– 8 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 2 cups heavy cream

– 2 tablespoons butter

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot, melt the butter over medium heat. Add the onions and sauté for 5 minutes until translucent.

2. 2. Add the garlic and sauté for 2 more minutes, until fragrant.

3. 3. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until potatoes are very soft.

4. 4. Remove from heat and use an immersion blender to puree the soup until smooth and creamy.

5. 5. Stir in the heavy cream and season with salt and pepper to taste.
