Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 potatoes, peeled and cubed

– 4 cups beef broth

– 1 (15 oz) can diced tomatoes

– 2 tsp Worcestershire sauce

– 1 tsp dried oregano

– 1 tsp dried basil

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the onions, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. – Pour in the beef broth, diced tomatoes, Worcestershire sauce, oregano, and basil. Bring the soup to a boil.

4. – Reduce the heat to low, add the cubed potatoes, and simmer for 20-25 minutes, or until the potatoes are tender.

5. – Season with salt and pepper to taste.

6. – Serve hot, garnished with fresh parsley if desired.

Notes

This Hamburger Soup Recipe is a great way to use up any leftover ground beef. You can also add in other vegetables like green beans, corn, or peas to customize it to your liking. For a thicker soup, you can mash some of the potatoes against the side of the pot.
