Description

Indulge in the rich and comforting flavors of this Guinness & Tallow Beef Stew. Tender chunks of beef are simmered in a robust broth infused with the bold taste of Guinness beer and the rich, savory essence of tallow. A hearty and satisfying dish that’s perfect for chilly evenings.


Ingredients

– 2 lbs beef chuck, cut into 1-inch cubes

– 1/4 cup tallow or vegetable oil

– 1 large onion, diced

– 3 carrots, peeled and sliced

– 4 cloves garlic, minced

– 2 cups Guinness stout

– 2 cups beef broth

– 2 bay leaves

– 1 tsp dried thyme

– 1 tsp smoked paprika

– Salt and black pepper to taste

– Chopped parsley for garnish


Instructions

1. – Pat the beef cubes dry and season with salt and pepper.

2. – Heat the tallow in a large Dutch oven or heavy-bottomed pot over medium-high heat. Working in batches, sear the beef on all sides until browned, about 3-4 minutes per batch. Transfer the seared beef to a plate.

3. – Reduce the heat to medium, add the onions and carrots to the pot, and cook for 5-7 minutes, stirring occasionally, until softened.

4. – Add the garlic and cook for 1 minute, until fragrant.

5. – Pour in the Guinness, scraping up any browned bits from the bottom of the pot. Bring to a simmer and cook for 2-3 minutes to allow the alcohol to cook off.

6. – Add the seared beef, beef broth, bay leaves, thyme, and smoked paprika. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5-2 hours, or until the beef is very tender.

7. – Remove the bay leaves. Taste and adjust seasoning with salt and pepper as needed.

8. – Serve the Guinness & Tallow Beef Stew hot, garnished with chopped parsley. Enjoy with crusty bread for dipping.

Notes

For a richer flavor, use a combination of tallow and unsalted butter when searing the beef. The stew can be made a day or two in advance and reheated before serving.
