Ingredients

– 1 1/2 cups almond flour

– 1/4 cup granulated erythritol or sweetener of choice

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 3 large eggs

– 2 tablespoons unsweetened almond milk

– 1 teaspoon vanilla extract

– Sugar-free glaze (optional)

– Powdered erythritol or sweetener (optional)


Instructions

1. 1. In a medium bowl, whisk together the almond flour, erythritol, baking powder, and salt.

2. 2. In a separate bowl, beat the eggs. Then stir in the almond milk and vanilla.

3. 3. Pour the wet ingredients into the dry ingredients and mix until a thick batter forms.

4. 4. Preheat a chaffle maker or waffle iron. Lightly grease if needed.

5. 5. Scoop the batter, about 1/4 cup per chaffle, onto the preheated chaffle maker. Close and cook for 3-4 minutes, until golden brown.

6. 6. Repeat with the remaining batter.

7. 7. Drizzle the warm chaffles with sugar-free glaze and sprinkle with powdered erythritol, if desired.

Notes

For a more donut-like flavor, add 1/2 teaspoon of ground cinnamon to the batter. These chaffles can also be enjoyed plain or with your favorite toppings.
