Ingredients

– 1 lb large shrimp, peeled and deveined

– 1 avocado, diced

– 1 cup fresh corn kernels

– 1/2 red onion, finely chopped

– 1 jalapeño, seeded and finely chopped

– 1/4 cup chopped cilantro

– 2 tbsp lime juice

– 1/2 cup sour cream

– 2 cloves garlic, minced

– 1 tbsp olive oil

– Salt and pepper to taste


Instructions

1. – Preheat grill to medium-high heat.

2. – In a bowl, combine the diced avocado, corn, red onion, jalapeño, cilantro, and lime juice. Season with salt and pepper and set aside.

3. – In a separate bowl, mix the sour cream and minced garlic. Season with salt and pepper and set aside.

4. – Brush the shrimp with olive oil and season with salt and pepper.

5. – Grill the shrimp for 2-3 minutes per side, or until opaque and cooked through.

6. – Serve the grilled shrimp on a bed of the avocado corn salsa, drizzled with the creamy garlic sauce.

Notes

Feel free to adjust the spice level by adding more or less jalapeño. The creamy garlic sauce can also be used as a dip for the shrimp and salsa.
