Description

These Grilled Lemon-Herb Chicken Skewers are a quick and easy weeknight meal or summer BBQ favorite. Juicy, flavorful chicken is marinated in a bright, zesty lemon-herb mixture, then grilled to perfection for a delicious, healthy dinner.


Ingredients

– 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

– 1/4 cup olive oil

– 1/4 cup freshly squeezed lemon juice (about 2 lemons)

– 2 tablespoons chopped fresh parsley

– 2 tablespoons chopped fresh oregano

– 2 cloves garlic, minced

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. – In a large bowl, combine the chicken, olive oil, lemon juice, parsley, oregano, garlic, salt, and pepper. Toss to coat the chicken evenly.

2. – Cover the bowl and let the chicken marinate in the refrigerator for 30 minutes to 1 hour.

3. – Preheat grill to medium-high heat.
