Ingredients
– 1 1/2 cups all-purpose flour
– 1 cup granulated sugar
– 1/4 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup buttermilk
– 2 large eggs
– 1 teaspoon vanilla extract
– 2-3 drops green food coloring
Instructions
1. – Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. – In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
3. – In a separate bowl, beat the buttermilk, eggs, and vanilla extract until well combined. Add the green food coloring and mix until the desired green color is achieved.
4. – Pour the buttermilk mixture into the dry ingredients and stir just until combined, being careful not to overmix.
5. – Scoop the batter evenly into the prepared muffin cups, filling them about 3/4 full.
6. – Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
7. – Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
8. – Once cooled, frost the cupcakes with your favorite cream cheese frosting.
Notes
– For a more vibrant green color, add an additional 1-2 drops of green food coloring.
