These Grapefruit and Thyme Shortbread cookies are a delightful twist on classic shortbread, featuring a bright, citrusy flavor and a crumbly, buttery texture.
Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 3/4 cup granulated sugar
– 1 tablespoon grapefruit zest
– 2 teaspoons fresh thyme leaves
– 1/4 teaspoon salt
– 2 cups all-purpose flour
Instructions
1. – Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
2. – In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
3. – Mix in the grapefruit zest, thyme leaves, and salt until well combined.
4. – Gradually add the flour and mix until a dough forms.
5. – Scoop the dough by the tablespoonful and roll into balls. Place them about 2 inches apart on the prepared baking sheet.
6. – Bake for 12-15 minutes, or until the cookies are lightly golden on the edges.
7. – Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
– For a more intense grapefruit flavor, you can also add a tablespoon of fresh grapefruit juice to the dough.
