– 2 cups all-purpose flour

– 1 teaspoon salt

– 1 teaspoon active dry yeast

– 1 cup warm water

– 1/4 cup olive oil, plus more for brushing

– 2 cloves garlic, minced

– 2 tablespoons chopped fresh rosemary


Instructions

1. – In a large bowl, combine the flour, salt, and yeast. Stir to mix.

2. – Add the warm water and 1/4 cup of olive oil to the dry ingredients. Mix until a shaggy dough forms.

3. – Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until the dough is smooth and elastic.

4. – Place the dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.

5. – Punch down the dough and divide it into 12 equal pieces. Roll each piece into a ball and place in a greased muffin tin.

6. – Preheat the oven to 400°F (200°C).

7. – Brush the tops of the muffins with olive oil and sprinkle with the minced garlic and chopped rosemary.

8. – Bake for 15-20 minutes, or until the muffins are golden brown.
