Ingredients

– 4 boneless, skinless chicken breasts

– 4 oz. goat cheese, softened

– 1 tbsp. olive oil

– 2 large onions, sliced

– 2 cloves garlic, minced

– 2 tbsp. balsamic vinegar

– 1 tbsp. brown sugar

– Salt and pepper to taste

– Fresh parsley, for garnish


Instructions

1. 1. Preheat oven to 375°F.

2. 2. In a medium bowl, mix the softened goat cheese until creamy and spreadable.

3. 3. Slice a deep pocket into the side of each chicken breast, being careful not to cut all the way through.

4. 4. Stuff each chicken breast with about 1-2 tbsp. of the goat cheese mixture.

5. 5. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook for 15-20 minutes, stirring occasionally, until caramelized and softened.

6. 6. Stir in the minced garlic and cook for 1 minute more.

7. 7. Add the balsamic vinegar and brown sugar to the onions. Stir to combine and let the mixture simmer for 2-3 minutes.

8. 8. Place the stuffed chicken breasts in a baking dish and top each one with the caramelized onions.

9. 9. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F.
