Description

Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 garlic cloves, minced

– 4 cups gluten-free chicken broth

– 2 cups shredded cooked chicken

– 8 oz gluten-free egg noodles

– 2 tablespoons chopped fresh parsley

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

2. – Add the garlic and sauté for 1 minute, until fragrant.

3. – Pour in the chicken broth and bring to a boil. Add the shredded chicken and gluten-free noodles. Reduce heat and simmer for 10-12 minutes, until the noodles are tender.

4. – Stir in the chopped parsley and season with salt and pepper to taste.

Notes

For a thicker soup, you can add a cornstarch slurry towards the end of cooking. Store leftover soup in an airtight container in the refrigerator for up to 4 days.
