Ingredients
– 2 1/4 cups all-purpose flour
– 2 teaspoons ground ginger
– 1 teaspoon baking soda
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground cloves
– 1/4 teaspoon salt
– 3/4 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 1 large egg
– 1/4 cup molasses
Instructions
1. – In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.
2. – In a large bowl, cream the butter and sugar until light and fluffy, about 2-3 minutes.
3. – Beat in the egg and molasses until well combined.
4. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. – Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 2 hours or up to 3 days.
6. – Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper.
7. – Roll out the dough on a lightly floured surface to 1/4-inch thickness. Cut out shapes using cookie cutters.
8. – Place the cookies 2 inches apart on the prepared baking sheets.
9. – Bake for 8-10 minutes, or until the edges are lightly golden.
10. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For the icing, mix 1 1/2 cups of confectioners’ sugar with 2-3 tablespoons of milk or cream until you reach the desired consistency. Drizzle or spread the icing over the cooled cookies. Enjoy!
