Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 cup diced mushrooms

– 4 cups low-sodium chicken or vegetable broth

– 1 (15 oz) can diced tomatoes

– 1 cup cooked shredded chicken (or chickpeas for a vegetarian option)

– 2 cups kale, chopped

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Fresh parsley for garnish


Instructions

1. 1. In a large pot, heat the olive oil over medium heat.

2. 2. Add the onion and garlic and sauté for 2-3 minutes until fragrant.

3. 3. Add the carrots, celery, and mushrooms. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
