Ingredients
– 1 lb brussels sprouts, trimmed and halved
– 3 cloves garlic, minced
– 2 tbsp olive oil
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
Instructions
1. – Preheat oven to 400°F.
2. – Toss the brussels sprouts, garlic, olive oil, salt, and pepper in a large bowl until well coated.
3. – Spread the brussels sprouts in a single layer on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
4. – In a saucepan, heat the heavy cream over medium heat until simmering. Reduce heat and let simmer for 5 minutes, stirring occasionally, until thickened.
5. – Remove the saucepan from heat and stir in the cheddar and Parmesan cheeses until melted and well combined.
6. – Transfer the roasted brussels sprouts to a baking dish and pour the creamy cheese sauce over the top, making sure all the sprouts are evenly coated.
7. – Bake for an additional 10-15 minutes, until the sauce is bubbling and the top is lightly browned.
8. – Serve hot and enjoy!
Notes
This dish can be made ahead of time and reheated before serving. The cheese sauce can also be thinned with a bit of milk or cream if it becomes too thick. For a crunchier topping, sprinkle breadcrumbs or crushed crackers over the top before baking.
