Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 6 cloves garlic, minced

– 1 head of cabbage, shredded

– 4 cups vegetable or chicken broth

– 2 tablespoons tomato paste

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. – In a large pot, heat the olive oil over medium heat.

2. – Add the diced onion and sauté for 5 minutes until translucent.

3. – Stir in the minced garlic and cook for 1 minute, until fragrant.

4. – Add the shredded cabbage and sauté for 5-7 minutes, until slightly softened.

5. – Pour in the broth and stir in the tomato paste and dried thyme.

6. – Bring the soup to a simmer and let it cook for 15-20 minutes, until the cabbage is tender.

7. – Season with salt and pepper to taste.
