Description

Tender, juicy chicken and perfectly cooked potatoes simmered in a rich and creamy garlic parmesan sauce – the ultimate comfort food recipe that’s ready in just 30 minutes!


Ingredients

– 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces

– 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks

– 3 cloves garlic, minced

– 1 cup heavy cream

– 1 cup grated parmesan cheese

– 1 tsp dried thyme

– 1 tsp dried parsley

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Place the chicken and potatoes in a crockpot.

2. – In a bowl, whisk together the garlic, heavy cream, parmesan, thyme, parsley, salt, and pepper. Pour the mixture over the chicken and potatoes and stir to combine.

3. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.

4. – Serve hot, garnished with additional parsley if desired.

Notes

– For best results, use freshly grated parmesan cheese.

– You can substitute boneless, skinless chicken thighs for the breasts if desired.

– Feel free to add other vegetables like carrots or green beans to the crockpot.
