Description

Ingredients

– 1 lb boneless, skinless chicken thighs

– 1 lb carrots, peeled and cut into 1-inch pieces

– 3 cloves garlic, minced

– 2 tbsp olive oil

– 1 tsp dried thyme

– 1 tsp dried rosemary

– Salt and pepper to taste

– 2 tbsp chopped fresh parsley


Instructions

1. 1. Preheat oven to 400°F.

2. 2. In a large bowl, toss the chicken and carrots with the garlic, olive oil, thyme, rosemary, salt, and pepper.

3. 3. Spread the mixture onto a baking sheet and roast for 25-30 minutes, or until the chicken is cooked through and the carrots are tender.

Notes
