Ingredients
– 4 medium green tomatoes, sliced 1/2 inch thick
– 1 cup all-purpose flour
– 2 eggs, beaten
– 1 cup panko breadcrumbs
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– Vegetable oil for frying
Instructions
1. 1. Dredge the tomato slices in flour, shaking off any excess.
2. 2. Dip the floured tomato slices in the beaten eggs, allowing any excess to drip off.
3. 3. Coat the tomato slices in the panko breadcrumbs, pressing gently to help them adhere.
4. 4. In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat.
5. 5. Carefully add the breaded tomato slices to the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
6. 6. Transfer the fried green tomatoes to a paper towel-lined plate to drain any excess oil.
7. 7. Season with garlic powder, paprika, salt, and pepper.
8. 8. Serve hot, with your favorite dipping sauce on the side.
Notes
For best results, use firm, unripe green tomatoes. The coating can also be made with cornmeal or all-purpose flour instead of panko. Experiment with different seasoning blends to find your perfect flavor.
