This Fresh Berry Chantilly Flag Cake is a delightful patriotic dessert that’s perfect for 4th of July celebrations or any summer gathering. Moist vanilla cake is layered with juicy fresh berries and fluffy whipped cream, then topped with a stunning American flag design.
Ingredients
– 2 cups cake flour
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 3 large eggs
– 1 teaspoon vanilla extract
– 1 cup fresh strawberries, sliced
– 1 cup fresh blueberries
– 1 cup fresh raspberries
– 2 cups heavy cream
– 2 tablespoons powdered sugar
Instructions
1. – Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
2. – In a medium bowl, whisk together the cake flour, baking powder, and salt.
3. – In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
4. – Gradually fold in the dry ingredients until just combined, being careful not to overmix.
5. – Divide the batter evenly between the prepared cake pans.
6. – Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
7. – In a large bowl, beat the heavy cream and powdered sugar until stiff peaks form.
8. – Place one cake layer on a serving plate and top with half of the fresh berries. Spread half of the whipped cream over the berries.
9. – Top with the remaining cake layer, the remaining berries, and the remaining whipped cream.
10. – Use the berries to create an American flag design on top of the cake.
11. – Refrigerate for at least 2 hours before serving.
Notes
For best results, use fresh, ripe berries for maximum flavor. You can also experiment with different berry combinations, such as adding blackberries or blueberries. The cake can be made a day in advance and stored in the refrigerator until ready to serve.
