Ingredients
– 4 large yellow onions, thinly sliced
– 2 tablespoons unsalted butter
– 1 tablespoon olive oil
– 4 cups beef or chicken broth
– 1 cup dry white wine
– 2 sprigs fresh thyme, plus more for garnish
– 1 baguette, sliced and toasted
– 2 cups shredded Gruyère cheese
Instructions
1. – In a large pot or Dutch oven, melt the butter and olive oil over medium heat.
2. – Add the sliced onions and cook, stirring occasionally, for 20-25 minutes until deeply caramelized and softened.
3. – Deglaze the pan with the white wine, scraping up any browned bits from the bottom.
4. – Add the beef or chicken broth and thyme sprigs. Bring to a simmer and let cook for 10 minutes.
5. – Preheat the oven to 400°F (200°C).
6. – Divide the soup among oven-safe bowls or ramekins. Top each serving with a toasted baguette slice and sprinkle with shredded Gruyère cheese.
7. – Bake for 5-7 minutes, or until the cheese is melted and bubbly.
8. – Garnish with fresh thyme and serve immediately.
Notes
For a deeper flavor, you can caramelize the onions for up to 45 minutes. Experiment with different types of cheese, such as Parmesan or Fontina, for a unique twist. The soup can be made ahead and reheated before serving.
