Description

Discover the authentic flavors of Mexico with this quick and easy fideo soup recipe. Featuring toasted fideo noodles simmered in a rich, tomato-based broth, this comforting dish is ready in just 20 minutes, making it the perfect weeknight meal.

Ingredients

– 8 oz fideo noodles

– 1 tbsp olive oil

– 1 onion, diced

– 3 garlic cloves, minced

– 1 (14.5 oz) can diced tomatoes

– 4 cups chicken or vegetable broth

– 1 tsp ground cumin

– 1 tsp dried oregano

– Salt and pepper to taste

– Chopped cilantro, lime wedges, and crispy tortilla strips for serving

Instructions

1. 1. In a large pot or Dutch oven, toast the fideo noodles over medium heat, stirring frequently, until lightly browned, about 2-3 minutes.

2. 2. Add the olive oil, onion, and garlic to the pot. Cook, stirring occasionally, until the onion is translucent, about 5 minutes.

3. 3. Stir in the diced tomatoes, broth, cumin, and oregano. Season with salt and pepper to taste.

4. 4. Bring the soup to a boil, then reduce the heat and simmer for 10-15 minutes, or until the noodles are tender.

5. 5. Serve the fideo soup hot, garnished with chopped cilantro, lime wedges, and crispy tortilla strips.

Notes

For a heartier meal, you can add shredded chicken, sautéed vegetables, or a dollop of sour cream to the soup. This soup also freezes well, so you can make a double batch and save some for later.
