Ingredients
– 8 oz rigatoni pasta
– 1 cup crumbled feta cheese
– 1 cup fresh cranberries
– 1/4 cup olive oil
– 2 tbsp lemon juice
– 1 tbsp white wine vinegar
– 1 tsp Dijon mustard
– 1 garlic clove, minced
– 1 tsp honey
– Salt and pepper to taste
– Chopped fresh parsley, for garnish
Instructions
1. 1. Cook the rigatoni according to package instructions until al dente. Drain and rinse with cold water to cool.
2. 2. In a large bowl, combine the cooked rigatoni, crumbled feta, and fresh cranberries.
3. 3. In a small bowl, whisk together the olive oil, lemon juice, white wine vinegar, Dijon mustard, garlic, and honey. Season with salt and pepper to taste.
4. 4. Pour the lemon vinaigrette over the rigatoni salad and gently toss to coat.
5. 5. Garnish with chopped fresh parsley.

Notes
For a heartier meal, you can add grilled chicken or shrimp to this salad. You can also substitute dried cranberries if fresh are not available. This salad can be made in advance and stored in the refrigerator for up to 3 days.
