Ingredients

– 6 cups mixed greens (such as spinach, arugula, and kale)

– 2 cups diced roasted sweet potatoes

– 1 cup chopped pecans

– 1/2 cup dried cranberries

– 1/4 cup olive oil

– 3 tablespoons maple syrup

– 2 tablespoons lime juice

– 1 tablespoon Dijon mustard

– 1 clove garlic, minced

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper


Instructions

1. 1. Preheat oven to 400°F. Toss the diced sweet potatoes with a drizzle of olive oil and season with salt and pepper. Roast for 20-25 minutes, or until tender and lightly browned.
