Ingredients
– 3 lbs Granny Smith apples, peeled, cored, and chopped
– 2 cups apple cider
– 1 large onion, diced
– 2 tablespoons butter
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 1 cup heavy cream
– Salt and pepper to taste
Instructions
1. – In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
2. – Add the chopped apples, apple cider, cinnamon, nutmeg, and cloves. Bring the mixture to a simmer and cook for 20-25 minutes, or until the apples are very soft.
3. – Remove the pot from the heat and use a potato masher or immersion blender to mash the apples into a chunky, stew-like consistency.
4. – Stir in the heavy cream and season with salt and pepper to taste.
5. – Serve the Fall Apple Cider Stew Mash warm, garnished with fresh rosemary if desired.
Notes
For a thicker consistency, you can simmer the stew for longer or mash the apples more thoroughly. This dish can also be served as a side dish or topped with roasted pork or chicken.
