Description

Ingredients

– 1 (15 oz) can chickpeas, drained and rinsed

– 1/2 cup fresh parsley, chopped

– 1/4 cup all-purpose flour

– 1 tsp ground cumin

– 1 tsp ground coriander

– 1/2 tsp baking powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– 2 tbsp olive oil


Instructions

1. 1. In a food processor, combine the drained chickpeas, parsley, flour, cumin, coriander, baking powder, salt, and pepper. Pulse until a thick, textured batter forms.

2. 2. Heat a waffle iron and lightly grease with cooking spray. Scoop 1/4 cup portions of the falafel batter onto the hot waffle iron and cook for 3-4 minutes until crispy and golden brown.

3. 3. Serve the falafel waffles warm, topped with desired toppings like hummus, tzatziki, chopped veggies, and a squeeze of lemon juice.

Notes

For best texture, don’t overmix the batter. The waffles can be kept warm in a 200°F oven while cooking the remaining batches. Leftovers can be reheated in a toaster oven or regular oven.
