Description

This Fajita Chicken Casserole is a delicious and easy one-pan meal that’s bursting with bold Tex-Mex flavors. Tender chicken, colorful bell peppers, and melted cheese come together for a comforting and satisfying dinner that the whole family will love.


Ingredients

– 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 red bell pepper, sliced

– 1 green bell pepper, sliced

– 1 yellow onion, sliced

– 2 cloves garlic, minced

– 1 tbsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– 1/2 tsp smoked paprika

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup shredded cheddar cheese

– 1 cup shredded Monterey Jack cheese


Instructions

1. – Preheat the oven to 375°F.

2. – In a large bowl, combine the chicken, bell peppers, onion, garlic, chili powder, cumin, oregano, smoked paprika, salt, and black pepper. Toss to coat the ingredients evenly.

3. – Transfer the mixture to a 9×13 inch baking dish. Spread it out in an even layer.

4. – Sprinkle the cheddar and Monterey Jack cheeses over the top.

5. – Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

6. – Let the casserole cool for 5 minutes before serving.

Notes

– Serve the Fajita Chicken Casserole over rice or with warm tortillas on the side.

– Feel free to customize the vegetables by using different bell pepper colors or adding sliced mushrooms or diced tomatoes.

– For extra heat, add a diced jalapeño or a pinch of cayenne pepper.

– Leftovers can be stored in the refrigerator for up to 4 days and reheated in the oven or microwave.
