Description

Ingredients

– 1 cup creamy peanut butter

– 1 cup granulated sugar

– 1 egg

– 1 ripe banana, mashed

– 1 tsp baking soda

– 1/4 tsp salt

– 1 cup all-purpose flour

– 1/2 cup mini chocolate chips


Instructions

1. – Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.

2. – In a large bowl, mix together the peanut butter, sugar, and egg until well combined.

3. – Stir in the mashed banana, baking soda, and salt until fully incorporated.

4. – Gradually add the flour, mixing until a dough forms.

5. – Fold in the mini chocolate chips.

6. – Scoop the dough into the prepared muffin tin, filling each cup about 3/4 full.

7. – Bake for 12-15 minutes, or until the edges are golden brown and the centers are still slightly soft.

8. – Allow the cookie cups to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a fun twist, try swapping the chocolate chips for peanut butter chips or chopped peanuts. These cookies can also be made into regular drop cookies if you don’t have a muffin tin.
