Ingredients
– 1 lb boneless, skinless chicken breasts
– 1 cup fresh basil leaves
– 2 cloves garlic
– 1/4 cup pine nuts
– 1/4 cup grated Parmesan cheese
– 2 tbsp olive oil
– 1/4 tsp salt
– 1/8 tsp black pepper
– 8 large lettuce leaves (such as romaine or butter lettuce)
Instructions
1. 1. In a food processor, combine the basil, garlic, pine nuts, Parmesan, olive oil, salt, and pepper. Pulse until a smooth pesto forms.
2. 2. Season the chicken breasts with salt and pepper. Grill or pan-sear the chicken until cooked through, about 5-7 minutes per side.
