Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 2 cups shredded cooked chicken

– 8 ounces egg noodles

– 2 bay leaves

– 1 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat.

2. – Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.

3. – Stir in the garlic and cook for 1 minute, until fragrant.

4. – Pour in the chicken broth and add the shredded chicken, egg noodles, bay leaves, and thyme.

5. – Bring the soup to a boil, then reduce the heat and simmer for 10-15 minutes, until the noodles are tender.

6. – Season with salt and pepper to taste.

7. – Remove the bay leaves before serving.

Notes
