Description
Indulge in the irresistible flavors of these easy cheesy ground beef enchiladas! Tender ground beef, melted cheddar and Monterey Jack cheeses, and a rich enchilada sauce come together in this family-friendly dinner that’s ready in a flash.
Ingredients
– 1 lb ground beef
– 1 packet taco seasoning
– 1/2 cup water
– 8 oz shredded cheddar cheese
– 8 oz shredded Monterey Jack cheese
– 12 flour tortillas
– 1 (15 oz) can enchilada sauce
Instructions
1. – Preheat oven to 350°F.
2. – In a skillet over medium heat, cook the ground beef until browned and crumbled. Drain excess fat.
3. – Add the taco seasoning and water to the ground beef. Stir and simmer for 5 minutes.
4. – Spread 1/2 cup of enchilada sauce in the bottom of a 9×13 baking dish.
5. – Fill each tortilla with 2-3 tablespoons of the ground beef mixture and 2-3 tablespoons of the shredded cheese. Roll up and place seam-side down in the baking dish.
6. – Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining shredded cheese.
7. – Bake for 20-25 minutes, until cheese is melted and bubbly.
8. – Serve hot, garnished with chopped cilantro if desired.
Notes
For extra flavor, you can add diced onions, minced garlic, or chopped jalapeños to the ground beef mixture. Leftovers can be stored in the refrigerator for up to 3 days.
