Ingredients
– 2 English cucumbers, sliced
– 1 avocado, diced
– 8 oz lump crab meat
– 2 tbsp rice vinegar
– 1 tbsp sesame oil
– 1 tsp soy sauce
– 1 tsp sesame seeds
– 1/4 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. In a large bowl, combine the sliced cucumbers, diced avocado, and lump crab meat.
2. 2. In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, sesame seeds, salt, and black pepper.
3. 3. Pour the dressing over the cucumber salad and toss gently to coat.

Notes
For a creamier texture, you can mash half of the avocado before adding it to the salad. This salad is also delicious served over a bed of mixed greens or with crackers on the side.
