Ingredients

– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 cup uncooked long-grain white rice

– 1 cup chicken broth

– 1 cup plain Greek yogurt

– 1 cucumber, grated and squeezed dry

– 2 cloves garlic, minced

– 1 tbsp lemon juice

– 1 tsp dried dill

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Preheat oven to 375°F.

2. – In a large baking dish, combine the chicken, rice, and chicken broth. Stir to mix well.

3. – In a separate bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper.

4. – Pour the tzatziki sauce over the chicken and rice, and stir to combine.

5. – Cover the baking dish tightly with foil and bake for 30 minutes, or until the chicken is cooked through and the rice is tender.

6. – Remove the foil and fluff the rice with a fork. Serve hot, garnished with additional lemon wedges and fresh herbs, if desired.

Notes

For extra flavor, you can add a teaspoon of dried oregano or basil to the tzatziki sauce. You can also use boneless, skinless chicken thighs instead of breasts. The dish can be made ahead and stored in the refrigerator for up to 3 days.
