Ingredients
– 2 cups all-purpose flour
– 2 cups granulated sugar
– 3/4 cup unsweetened cocoa powder
– 2 teaspoons baking soda
– 1 teaspoon baking powder
– 1 teaspoon salt
– 2 eggs
– 1 cup buttermilk
– 1/2 cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup chopped pistachios
– 2 cups chocolate frosting
Instructions
1. 1. Preheat oven to 350°F. Grease and flour two 8-inch round baking pans.
2. 2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3. 3. In a separate bowl, beat the eggs, buttermilk, oil, and vanilla until well combined.
4. 4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
5. 5. Fold in 1/2 cup of the chopped pistachios.
6. 6. Divide the batter evenly between the prepared pans.
7. 7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

10. 10. Place one cake layer on a serving platter and top with a generous amount of chocolate frosting. Repeat with the remaining layers, frosting each one.
11. 11. Sprinkle the remaining 1/2 cup of chopped pistachios over the top and sides of the cake.
12. 12. Refrigerate the cake for at least 2 hours before serving to allow the frosting to set.
Notes
For an extra special touch, you can add a drizzle of chocolate sauce over the top of the cake before serving. This cake can be made in advance and stored in the refrigerator for up to 5 days.
