Ingredients
– 3 cups (375g) all-purpose flour
– 1 teaspoon (5g) active dry yeast
– 1 teaspoon (5g) salt
– 1 1/4 cups (295ml) warm water
– 1/4 cup (60ml) olive oil, plus more for drizzling
– 1 cup (150g) chopped dill pickles
– 2 tablespoons (10g) chopped fresh dill
Instructions
1. – In a large bowl, combine the flour, yeast, and salt. Stir to mix.
2. – Add the warm water and olive oil to the dry ingredients and mix until a shaggy dough forms.
3. – Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until the dough becomes smooth and elastic.
4. – Place the dough in a lightly greased bowl, cover with a damp towel or plastic wrap, and let rise for 1 hour, or until doubled in size.
5. – Punch down the dough to release any air bubbles. Gently stretch and press the dough into a greased 9×13-inch baking pan.
6. – Sprinkle the chopped dill pickles and fresh dill evenly over the top of the dough.
7. – Drizzle the top with additional olive oil.
8. – Bake at 400°F (205°C) for 20-25 minutes, or until the focaccia is golden brown and the pickles are lightly crisped.
9. – Remove from the oven and let cool for 10 minutes before slicing and serving.
