Ingredients

– 12 hard boiled eggs

– 1/2 cup mayonnaise

– 2 tbsp Dijon mustard

– 1 tsp paprika, plus more for dusting

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup all-purpose flour

– 2 large eggs, beaten

– 1 cup panko breadcrumbs

– Vegetable oil for frying


Instructions

1. 1. Carefully peel the hard boiled eggs and cut them in half lengthwise.

2. 2. Gently scoop out the yolks and place them in a medium bowl.

3. 3. Add the mayonnaise, Dijon mustard, 1 tsp of paprika, salt, and black pepper to the yolks. Mash and mix until smooth and creamy.

4. 4. Spoon the yolk mixture back into the egg white halves, piling it high.

5. 5. Set up a breading station with the flour, beaten eggs, and panko breadcrumbs in separate shallow dishes.

6. 6. Dredge the stuffed egg halves in the flour, dip them in the beaten egg, and then coat them evenly with the panko breadcrumbs.

7. 7. In a large skillet, heat 1-2 inches of vegetable oil over medium-high heat to 350°F.

8. 8. Carefully add the breaded egg halves to the hot oil and fry for 2-3 minutes per side, until golden brown.

9. 9. Transfer the fried deviled eggs to a paper towel-lined plate and sprinkle with additional paprika.
