Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 cup unsalted butter, chilled and cubed
– 1/4 cup granulated sugar
– 1/4 teaspoon salt
– 3 large eggs
– 1 cup heavy cream
– 8 ounces dark chocolate, chopped
– 1 tablespoon gold leaf sheets
Instructions
1. – Preheat the oven to 350°F. Grease a 9-inch tart pan with a removable bottom.
2. – In a food processor, pulse the flour, butter, sugar, and salt until the mixture resembles coarse crumbs. Add 1 egg and pulse until the dough just begins to come together.
3. – Press the dough into the prepared tart pan, pressing it up the sides. Refrigerate for 30 minutes.
4. – Blind bake the tart crust for 15 minutes. Remove the weights and bake for an additional 5 minutes. Allow to cool completely.
5. – In a medium saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and stir in the chopped dark chocolate until smooth and melted.
6. – Whisk in the remaining 2 eggs one at a time until fully incorporated.
7. – Pour the chocolate filling into the cooled tart crust. Refrigerate for at least 2 hours, or until set.
8. – Just before serving, carefully remove the tart from the pan. Gently place the gold leaf sheets on top of the tart, pressing lightly to adhere.
Notes
– For an even more decadent tart, consider adding a layer of caramel or ganache beneath the chocolate filling.
– Leftover tart can be stored in the refrigerator for up to 3 days.
