Description

Ingredients

– 1 cup green lentils, rinsed

– 2 cups fresh spinach, chopped

– 1 onion, diced

– 3 cloves garlic, minced

– 1-inch piece ginger, grated

– 1 tomato, diced

– 1 teaspoon cumin seeds

– 1 teaspoon coriander powder

– 1 teaspoon garam masala

– 1/2 teaspoon turmeric powder

– 1/4 teaspoon red chili powder (or to taste)

– Salt to taste

– 2 tablespoons oil

– Cilantro for garnish


Instructions

1. – In a saucepan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

2. – Add the diced onion and sauté until translucent, about 5 minutes.

3. – Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.

4. – Add the diced tomato and cook for 2-3 minutes, until the tomatoes soften.

5. – Add the rinsed lentils, turmeric, coriander powder, garam masala, and red chili powder. Stir to combine.

6. – Pour in 3 cups of water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.

7. – Stir in the chopped spinach and cook for an additional 5 minutes, until the spinach is wilted.

8. – Season with salt to taste.

9. – Serve the Dal Palak (Spinach Dal) hot, garnished with fresh cilantro. Enjoy with basmati rice or naan.

Notes

– For a creamier texture, you can blend a portion of the dal before adding the spinach.

– Adjust the spice level by adding more or less red chili powder.

– This dish can be made in advance and refrigerated for up to 4 days or frozen for up to 3 months.
